Strawberry Shortcake

 

Before making cake, wash and quarter a quart of strawberries.

In a bowl, add 3 Tbsp. sugar to the berries. Stir and let set, so the berries juice.

 

2 1/2 c. flour

2 tsp. baking powder

1/2 tsp. salt

2 eggs

1 c. sugar

1 c. milk

1 tsp. vanilla

2 tsp. butter

 

Stir together flour, baking powder and salt. In a separate bowl, beat eggs, sugar, milk and vanilla. Mix dry ingredients into egg mixture. Add melted butter and mix until combined.

 

 

Pour into a greased, 9x13 pan. Bake for 20-25 minutes at 375.

 

 

Top the cake with berries and cool whip. It is also good warm, right out of the oven, with berries and milk on top.
