From the Kitchen of Grandma Edna - Quick-Mix Ham Casserole

Quick-Mix Ham Casserole

1-1/2 c. minute rice

2 c. diced, cooked ham

1 quart green beans, not drained (2 cans)

1/4 c. onion, chopped

3 chicken bouillon cubes dissolved in 1-3/4 c. hot water

1 c. shredded cheddar cheese (reserve half)

Combine all ingredients and pour into a 2 quart casserole dish. 

Sprinkle reserved cheese over the top. Cover.

Bake at 350 for 1 hour.

Editor's Note: This recipe would be especially good with leftover ham - consider making it the day after Christmas for your guests!  

I also failed to note the "Cover" part of the instructions, so the recipe turned out a little crispier that Grandma Edna intended, but it was still delicious!
