From the Kitchen of Grandma Edna – Pumpkin Cake

Pumpkin Cake


4 eggs

2 c. white sugar

1 c. oil

2 c. cooked & mashed pumpkin

2 c. flour

2 tsp. baking powder

1 tsp. baking soda

2 tsp. cinnamon

1/2 tsp. salt


Optional add-ins

1 c. raisins

1 c. craisins

1 c. nuts (walnuts or pecans)

1 c. chocolate chips


Cream eggs and sugar. Add in oil and pumpkin and mix. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon and salt. Add to pumpkin mixture, stirring until flour is absorbed. Spread in a greased 9x13 pan. Bake at 350 for 25-30 minutes. Cool.

Top with Cream Cheese Frosting (recipe below)





Cream Cheese Frosting

4 tbsp. cream cheese, softened

4 tbsp. butter, softened

1 tbsp. milk

2 c. powdered sugar

1 tsp. vanilla


Combine all ingredients and beat until fluffy. Spread on cake and enjoy!
