Hamburger Potato Casserole

1 lb. hamburger
1 medium onion, chopped
2 stalks celery, chopped
2 cans diced potatoes, drained
1 can cream of mushroom soup
1/4 c. water
1/4 c. sour cream
1-2 c.  shredded cheese
1/2 tsp. salt
1/4 tsp. pepper
Brown the hamburger in a skillet with the onions and celery. Drain off grease. In a bowl, mix the potatoes, soup, water, sour cream, salt and pepper. When combined, mix in the hamburger mixture. Pour into a 9x13 casserole dish and top with cheese. Bake at 350 for 30 minutes.
You can also use diced, red skinned potatoes in place of canned potatoes. I use 8-10. Cooking time should be adjusted to make sure the potatoes cook through. It will be closer to 40 minutes, but check after it cooks for 30 minutes.
