Grandma Edna's Porcupine Meatballs
1 lb hamburger
1/2 c. rice, uncooked
2 Tbsp. green pepper, chopped (optional)
1/2 small onion, chopped
1 1/2 tsp. salt
Pepper to taste
1 can tomato soup
1 cup water
Mix all ingredients except for soup and water.
Shape into balls and put in frying pan.
Mix soup and water and pour over meatballs. Simmer for 45 minutes on medium low. Add more water as needed as the meatballs cook.
Editor's Note: This would be a fun dish to cook over the holidays with children or family that are visiting. It is very simple and took almost no time to put together. For variety, use pasta sauce or bbq sauce instead of the tomato soup. Serve with steamed veggies and Italian bread and dinner is on the table!
