Grandma Edna's Corn & Chicken Soup

Chicken Broth (Use the amount of broth based on the amount of soup you want to make. Can be boxed, canned or bouillon cubes.)

Cut up 2-3 c. chicken, cooked

Corn - 1 qt. or more

Use either macaroni, noodles or rice

Little bit of diced celery & onions

Seasoned salt

Salt & pepper

Basil

Butter for sautéing

Saute the celery and onion in butter in a stock pot. Add corn, stock and chicken. Bring to a boil. Add noodles. Cook 8-10 minutes until noodles are soft. Add more stock if needed.

Editor's Note: I had carrots on hand so I added them to the celery and onions when sautéing. I also opted to use a rotisserie chicken so I did not have to spend time cooking chicken ahead of time. I did not have basil but did have fresh thyme instead.

If you need to cook chicken for the soup, you could make your own chicken stock. Just throw some chicken breasts, onion, celery, carrots, parsley, salt and pepper into a stock pot, bring to a boil and then simmer for an hour.
