Baked Oatmeal

 

2/3 c. oil
3 tsp. Baking powder
1/2 tsp. salt
1 c. packed brown sugar
1 and 1/2 c. milk
4 c. quick oats

 

 

Optional add-in items: blueberries, raisins, craisins, nuts, peaches. For a lighter version, swap out the oil for applesauce, or use half oil, half applesauce, and cut the sugar to 3/4 cup.

Mix all ingredients. Pour into a greased 9"x13" pan and bake at 350 for 25-30 minutes. Serve in a bowl with milk.
